P\u0159esto se p\u0159edev\u0161\u00edm na soci\u00e1ln\u00edch<br \/>\ns\u00edt\u00edch a dokonce i v knih\u00e1ch objevuje, \u017ee kv\u00e1skov\u00fd \u017eitn\u00fd chl\u00e9b mohou vyzkou\u0161et i lid\u00e9<br \/>\ns celiaki\u00ed.<br \/>\nZm\u011b\u0159it obsah lepku v p\u0161eni\u010dn\u00e9m\/\u017eitn\u00e9m chlebu nen\u00ed \u00fapln\u011b jednoduch\u00e9. ELISA testy,<br \/>\nkter\u00e9 se b\u011b\u017en\u011b pou\u017e\u00edvaj\u00ed na kontrolu mal\u00fdch mno\u017estv\u00ed lepku, se pro b\u011b\u017en\u00fd chl\u00e9b<br \/>\nz p\u0161enice \u010di \u017eita nehod\u00ed, proto\u017ee testy jsou nastaveny na velmi n\u00edzk\u00e9 hodnoty lepku<br \/>\n(v p\u0159epo\u010dtu max. 80 mg\/kg). Celkov\u00fd obsah b\u00edlkovin n\u00e1m tak\u00e9 nepom\u016f\u017ee, proto\u017ee<br \/>\nzachyt\u00ed i b\u00edlkoviny jin\u00e9 ne\u017e lepkov\u00e9, v\u010detn\u011b b\u00edlkovin z dro\u017ed\u00ed, pokud je v receptu\u0159e<br \/>\nv\u00fdrobku.<br \/>\nOdhadem jsme stanovili, kolik b\u00edlkovin podobn\u00fdch lepku (tj. rozpustn\u00fdch v roztoc\u00edch<br \/>\nlihu nebo v roztoc\u00edch sol\u00ed) je v \u017eitn\u00e9m chlebu. Pou\u017eili jsme nutri\u010dn\u00ed \u00fadaje na webech<br \/>\ninternetov\u00fdch prodejc\u016f a vyb\u00edrali \u00fadaje o \u010dist\u011b \u017eitn\u00e9m chlebu. Pro informaci: \u017eitn\u00fd<br \/>\nchl\u00e9b je takov\u00fd, kter\u00fd obsahuje alespo\u0148 90 % \u017eita. Ale my jsme hledali chl\u00e9b bez<br \/>\np\u0159\u00edm\u011bsi p\u0161enice nebo p\u0159idan\u00e9ho lepku. Na\u0161li jsme chleby v rozmez\u00ed obsahu<br \/>\ncelkov\u00fdch b\u00edlkovin od 4,6 do 9,2 %, nejv\u00edce hodnot se pohybovalo kolem 6,5 % a<br \/>\ns touto hodnotou tak\u00e9 budeme d\u00e1le po\u010d\u00edtat.<br \/>\nV b\u00edlkovin\u00e1ch \u017eitn\u00e9 mouky je obsa\u017eeno kolem 45 % sekalinu a dal\u0161\u00edch b\u00edlkovin<br \/>\npat\u0159\u00edc\u00edch k lepku. Ve 100 g \u017eitn\u00e9ho chleba je tedy 6,5 g celkov\u00fdch b\u00edlkovin a z tohoto<br \/>\nmno\u017estv\u00ed je cca 2,9 g lepku. To je 29 g lepku na kg chleba. Proto\u017ee podle na\u0159. EU<br \/>\n828\/2014 je pro ozna\u010den\u00ed bez lepku hranice 20 mg lepku\/kg v\u00fdrobku, je to 1450x<br \/>\nv\u00edc, ne\u017e m\u016f\u017ee celiak konzumovat<br \/>\nT\u00edm jsme se vypo\u0159\u00e1dali s \u017eitem jako takov\u00fdm. Nyn\u00ed se v\u011bnujme \u017eitn\u00e9mu kv\u00e1sku.<br \/>\nSm\u011bs \u017eitn\u00e9 mouky a vody samovoln\u011b nebo s p\u0159id\u00e1n\u00edm vhodn\u00e9 kultury prokys\u00e1,<br \/>\nbakterie a kvasinky spot\u0159ebuj\u00ed \u010d\u00e1st cukr\u016f a dok\u00e1\u017e\u00ed tak\u00e9 rozlo\u017eit \u010d\u00e1st b\u00edlkovin na<br \/>\nmen\u0161\u00ed \u00faseky (peptidy).
