Na akci vystoupili p\u0159edn\u00ed odborn\u00edci v\u00fdzkumn\u00e9ho \u00fastavu, spolupracuj\u00edc\u00ed odborn\u00edci a l\u00e9ka\u0159i internist\u00e9. \u00da\u010dastn\u00edci konference z \u0159ad v\u011bdc\u016f, l\u00e9ka\u0159\u016f, z\u00e1stupc\u016f st\u00e1tn\u00ed spr\u00e1vy, nutri\u010dn\u00edch terapeut\u016f i student\u016f si vyslechli sedm samostatn\u00fdch p\u0159edn\u00e1\u0161ek o speci\u00e1ln\u00ed v\u00fd\u017eiv\u011b p\u0159i alergi\u00edch a intoleranc\u00edch na nejr\u016fzn\u011bj\u0161\u00ed potraviny. Akce prob\u011bhla pod z\u00e1\u0161titou ministra zem\u011bd\u011blstv\u00ed Ji\u0159\u00edho Milka a prim\u00e1torky hl. m. Prahy Adriany Krn\u00e1\u010dov\u00e9. V\u00edce jako 180 p\u0159ihl\u00e1\u0161en\u00fdch diskutovalo na tato t\u00e9mata.<\/p>\n<p>\u0158editel V\u00fdzkumn\u00e9ho \u00fastavu potravin\u00e1\u0159sk\u00e9ho Praha (V\u00daPP) Ing. Pavel Sk\u0159ivan, CSc. p\u0159edstavil \u00favodem jednotliv\u00e1 t\u00e9mata celodenn\u00ed akce, p\u0159ibl\u00ed\u017eil stru\u010dnou historii \u00fastavu a nast\u00ednil i mo\u017en\u00fd budouc\u00ed v\u00fdvoj v oblasti speci\u00e1ln\u00edch potravin. \u201eK po\u0159\u00e1dan\u00ed konference n\u00e1s inspirovala pr\u00e1ce na rozs\u00e1hl\u00e9 studii pro Ministerstvo zem\u011bd\u011blstv\u00ed, kter\u00e1 se v\u011bnovala t\u00e9matu potraviny pro skupiny obyvatel se zvl\u00e1\u0161tn\u00edmi po\u017eadavky na v\u00fd\u017eivu a byla dokon\u010dena na konci roku 2017. Cht\u011bl bych pod\u011bkovat v\u0161em koleg\u016fm, kte\u0159\u00ed se na t\u00e9to osmisetstr\u00e1nkov\u00e9 studii pod\u00edleli a jsem na n\u011b hrd\u00fd\u201c, zd\u016fraznil \u0159editel v\u00fdzkumn\u00e9ho \u00fastavu a pedagog z V\u0160CHT Ing. Pavel Sk\u0159ivan, CSc. \u00da\u010dastn\u00edci konference diskutovali pot\u00e9 o problematice potravinov\u00fdch alergi\u00ed. Doc. MUDr. Pavel Kohout, Ph.D. z intern\u00edho odd\u011blen\u00ed Thomayerovy nemocnice Praha popsal celiakii jako jedno z autoimunitn\u00edch onemocn\u011bn\u00ed zp\u016fsoben\u00e9 nesn\u00e1\u0161enlivost\u00ed lepku a hlavn\u00ed z\u00e1sady bezlepkov\u00e9 diety. N\u00e1sledovala p\u0159edn\u00e1\u0161ka Ing. Dany Gabrovsk\u00e9 z Potravin\u00e1\u0159sk\u00e9 komory a Ing. Pavla Sk\u0159ivana z V\u00daPP, ve kter\u00e9 shrnuli pozitivn\u00ed a negativn\u00ed str\u00e1nky v\u00fdvoje bezlepkov\u00fdch potravin v pr\u016fb\u011bhu 20 let. MUDr. Eli\u0161ka Kopelentov\u00e1 z pra\u017esk\u00e9 fakultn\u00ed nemocnice Motol nav\u00e1zala problematikou ml\u00e9ka, intolerance a alergie na lakt\u00f3zu. P\u0159ed ob\u011bdem si \u00fa\u010dastn\u00edci akce je\u0161t\u011b vyslechli p\u0159edn\u00e1\u0161ku prof. Ing. Jany Dost\u00e1lov\u00e9, CSc. z V\u0160CHT, na t\u00e9ma, zda mohou rostlinn\u00e9 n\u00e1poje nahradit ml\u00e9ko. Po ob\u011bd\u011b n\u00e1sledovaly prezentace imunolo\u017eky MUDr. Ivany \u0160etinov\u00e9 ze spol. Immunia s.r.o. Praha o potravinov\u00fdch alergi\u00edch a Mgr. Alexandry Ko\u0161t\u00e1lov\u00e9 ze St\u00e1tn\u00edho zdravotnick\u00e9ho \u00fastavu o alergenech ve \u0161koln\u00edch j\u00eddeln\u00e1ch. Na z\u00e1v\u011br vystoupil dlouholet\u00fd v\u011bdec V\u00daPP Ing. Milan Hou\u0161ka, CSc., kter\u00fd hovo\u0159il o metod\u00e1ch odstra\u0148ov\u00e1n\u00ed alergen\u016f z potravin.<\/p>\n<p>Sou\u010d\u00e1st\u00ed akce bylo i n\u011bkolik ochutn\u00e1vek bezlepkov\u00fdch potravin a n\u00e1poj\u016f. Z\u00e1stupci pivovaru Ferdinand p\u0159edstavili bezlepkov\u00e9 pivo, n\u00e1v\u0161t\u011bvn\u00edci tak\u00e9 ochutnali ovocn\u00e9 \u0161t\u00e1vy Refit z Beskydu Fry\u010dovice (o\u0161et\u0159en\u00e9 paskalizac\u00ed), Chmelinky z \u010dokol\u00e1dovny Carla, kokosov\u00e9 produkty od SENSE COCO, bezlepkov\u00e9 v\u00fdrobky od bezlepkov\u00e9 pek\u00e1rny Li\u0161ka a Mlska.
