Studijn\u00ed materi\u00e1ly zv\u00fd\u0161\u00ed konkurenceschopnost v sektoru a pos\u00edl\u00ed kapacity jak lektor\u016f, tak i pracovn\u00edk\u016f.<\/p>\n<p>Pek\u00e1rensk\u00fd a cukr\u00e1\u0159sk\u00fd sektor dos\u00e1hl v posledn\u00edch letech neuv\u011b\u0159iteln\u00e9ho pokroku, a to d\u00edky implementaci nov\u00fdch technologi\u00ed a n\u00e1stupu nov\u00fdch skupin spot\u0159ebitel\u016f s netradi\u010dn\u00edmi pot\u0159ebami, a tak\u00e9 d\u00edky zvy\u0161uj\u00edc\u00edm se po\u017eadavk\u016fm ohledn\u011b slo\u017een\u00ed j\u00eddla a metod\u00e1m zpracov\u00e1n\u00ed. Tato komplexita, ke kter\u00e9 se p\u0159idala i starost o \u017eivotn\u00ed prost\u0159ed\u00ed, a rostouc\u00ed procento populace, kter\u00e9 trp\u00ed intoleranc\u00ed nebo alergi\u00ed na ur\u010dit\u00e9 typy potravin, zp\u016fsobila zm\u011bny v mnoha aspektech pek\u00e1rensk\u00e9 a cukr\u00e1\u0159sk\u00e9 produkce.
