Bylo zachov\u00e1no p\u016fvodn\u00ed \u010dlen\u011bn\u00ed skript z roku 2004 autor\u016f P\u0159\u00edhoda, Sk\u0159ivan, Hru\u0161kov\u00e1, tedy na \u010d\u00e1st v\u011bnovanou cere\u00e1ln\u00ed chemii \u2013 chemii obilovin, prim\u00e1rn\u00ed zpracov\u00e1n\u00ed obilovin \u2013 ml\u00fdnsk\u00e9 technologii a v\u00fdrob\u011b t\u011bstovin. V\u0161echny \u010d\u00e1sti byly do zna\u010dn\u00e9 m\u00edry inovov\u00e1ny a p\u0159epracov\u00e1ny, proto\u017ee pohled na obiloviny v lidsk\u00e9 v\u00fd\u017eiv\u011b a jejich zpracov\u00e1n\u00ed do potravin, se v posledn\u00edch desetilet\u00edch intenzivn\u011b prom\u011b\u0148uje a vyv\u00edj\u00ed. Za t\u00e9m\u011b\u0159 patn\u00e1ct let od vzniku rukopisu p\u016fvodn\u00edch skript se zna\u010dn\u011b rozvinulo zkoum\u00e1n\u00ed n\u011bkter\u00fdch nutri\u010dn\u011b v\u00fdznamn\u00fdch slo\u017eek obilovin \u2013 jak \u0161iroce diskutovan\u00fdch b\u00edlkovin \u010dty\u0159 v\u00fdznamn\u00fdch obilovin (p\u0161enice, \u017eita je\u010dmene a ovsa) souhrnn\u011b dnes ozna\u010dovan\u00fdch jako lepek, tak \u0161krobu v souvislosti s glykemick\u00fdm indexem potravin, tak vl\u00e1kniny, jej\u00edch slo\u017eek i doprovodn\u00fdch l\u00e1tek. P\u0159esto\u017ee standardn\u00ed ml\u00fdnsk\u00e1 v\u00fdroba, stejn\u011b jako v\u00fdroba t\u011bstovin ve sv\u00fdch z\u00e1kladn\u00edch principech nepro\u0161ly za posledn\u00ed dv\u011b desetilet\u00ed z\u00e1sadn\u00edmi prom\u011bnami, ml\u00fdnsk\u00fd obor se sp\u00ed\u0161e roz\u0161i\u0159uje o nov\u00e9 postupy a technologie zpracov\u00e1n\u00ed tradi\u010dn\u00edch obilovin na v\u00fdrobky s vy\u0161\u0161\u00edm nutri\u010dn\u00edm benefitem a zpracov\u00e1n\u00ed netradi\u010dn\u00edch, nebo zapomenut\u00fdch, d\u0159\u00edve zpracov\u00e1van\u00fdch plodin. Tot\u00e9\u017e se t\u00fdk\u00e1 i surovin (v\u010detn\u011b netradi\u010dn\u00edch mouk) pro v\u00fdrobu t\u011bstovin. Na p\u0159edkl\u00e1dan\u00e1 skripta by v n\u00e1sleduj\u00edc\u00edch letech m\u011bla nav\u00e1zat tak\u00e9 p\u0159epracovan\u00e1 a inovovan\u00e1 verze skript cere\u00e1ln\u00ed chemie a technologie II, zab\u00fdvaj\u00edc\u00ed se sekund\u00e1rn\u00edm, zejm\u00e9na pek\u00e1rensk\u00fdm a pe\u010div\u00e1rensk\u00fdm zpracov\u00e1n\u00edm obilovin.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ing.
